Mac’s Yummy Smoked Salmon Rillettes
- 1 lb of cold smoked salmon
- Tbs. of unsalted butter
- ½ Cup of minced shallots
- 2 Tbs. of freshly squeezed lemon juice + a bit of zest
- 2 tablespoons finely chopped fresh tarragon leaves or chives
- 1/3 cup crème fraîche
- ¼ tsp. paprika, preferably a smoked paprika
- kosher salt and pepper to taste
Melt the butter in a medium frying pan over medium heat. Add the shallots, season with a pinch of salt and a few cranks of freshly ground black pepper. Cook until the shallots are translucent and soft; set aside to cool slightly.
Stir the shallots together with the lemon juice, herbs, lemon zest, and crème fraîche. Season with a pinch of salt, some freshly ground black pepper, and the paprika. Break salmon into bite-sized pieces and fold it into the other ingredients until just combined. Taste and adjust seasoning as desired. Transfer the mixture to an airtight container, cover, and refrigerate until chilled through, at least 2 hours.
Let the rillettes sit at room temperature for a few minutes before serving so they’re spreadable. To serve, spread on crackers or toast.
